Why is it that when you are stuck at “what should we cook today” the answer is always “make some aloo!” Potatoes are like this…extremely popular and have multipurpose usage.

And did you always think that eating a potato will make you fat?
Well, don’t – it is a surprising source of vitamin C and provides useful amounts of starch, thiamine and niacin and around a hundred grams will provide about eighty calories.

Ingredients for Kumara Salad Recipe

  • Sweet Potato peeled and cut into cubes 1

  • Crumbled Feta Cheese 1 tablespoon + for drizzling

  • Salt to taste

  • Crushed black peppercorns to taste

  • Small head romaine lettuce shredded 1

  • Cherry tomatoes halved 8

  • Radishes peeled and sliced 4 medium

  • Crumbled feta cheese 1/2 cup

  • Pinenuts 1/2 cup

  • Balsamic vinegar 2 tablespoons


Step 1

Preheat oven to 180°C.

Step 2

Put sweet potato cubes in a baking dish and pour one tablespoon oil on top. Sprinkle a pinch of salt and crushed peppercorns and roast in the preheated oven for twenty-five minutes or until soft. Remove from oven and cool down to room temperature.

Step 3

Put lettuce, cherry tomatoes and radishes in a serving bowl. Add the roasted sweet potato and mix. Sprinkle feta cheese and pinenuts on top.

Step 4

Drizzle olive oil and balsamic vinegar and serve immediately.
