Ingredients
- 4 eggs
- Salt to taste
- ½ teaspoon vinegar
- 4 English muffins, diagonally halved
- Crushed black peppercorns to taste
- Iceberg lettuce leaves for serving
- Roasted cherry tomato halves for serving
Method
- Boil sufficient water in a pan. Add salt and vinegar.
- Break one egg in a bowl.
- Stir the boiling water mixture, drop in the egg and poach for 3 minutes. Drain on an absorbent paper.
- Place the poached egg on the base of the muffin, sprinkle some salt and crushed peppercorns on top.
- Serve with few iceberg lettuce leaves and roasted cherry tomato halves.
