How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Cook time : 26-30 minutes

Ingredients for Herbed Rice With Mushrooms Recipe

  • Brown Rice 1 1/2 cups

  • Button Mushrooms halved 6-7 medium

  • Oregano 1 teaspoon

  • Spring onions with greens 4 stalks

  • Olive oil 2 tablespoons

  • Cumin seeds 1 teaspoon

  • Celery chopped 1 inch stalk

  • Salt to taste

  • Green chillies slit

Method

Step 1

Soak brown rice in four to four cups of water for one hour. Drain and keep aside. Chop spring onion bulbs. Chop greens and keep aside for garnishing.

Step 2

Heat oil in a pan. Add cumin seeds and sauté till they begin to change colour. Add spring onions and celery and sauté till translucent. Add drained rice and salt and sauté for one to two minutes.

Step 3

Add three and three quarter cups of water. Bring to a boil. Add mushrooms and green chillies. Bring to a boil, reduce heat, cover and allow to cook. Add dried oregano when rice is nearly done. Continue to cook till rice is fully done. Serve hot.
