Herbed Rice With Mushrooms

Ingredients list for Herbed Rice With Mushrooms

  • 1 1/2 cups Brown Rice
  • 6-7 medium Button Mushrooms halved
  • 1 teaspoon Oregano
  • 4 stalks Spring onions with greens
  • 2 tablespoons Olive oil
  • 1 teaspoon Cumin seeds
  • 1 inch stalk Celery chopped
  • to taste Salt
  • Green chillies slit

Method

  1. Soak brown rice in four to four cups of water for one hour. Drain and keep aside. Chop spring onion bulbs. Chop greens and keep aside for garnishing.
  2. Heat oil in a pan. Add cumin seeds and sauté till they begin to change colour. Add spring onions and celery and sauté till translucent. Add drained rice and salt and sauté for one to two minutes.
  3. Add three and three quarter cups of water. Bring to a boil. Add mushrooms and green chillies. Bring to a boil, reduce heat, cover and allow to cook. Add dried oregano when rice is nearly done. Continue to cook till rice is fully done. Serve hot.
