Ingredients list for Healthy Cookies
- 1 cup Muesli
- 1 cup Oats
- 2 Eggs
- ½ cup pumpkin puree
- 2 tablespoons Coconut oil
- ¼ cup Honey
- 2 tablespoons Pumpkin seeds roasted
- 2 tablespoons Cranberries dried
- 2 tablespoons Flax seeds toasted and crushed
- a pinch Cinnamon powder
- 2 tablespoons Whole wheat flour (atta)
- a pinch Salt
Method
- Break eggs into a bowl. Add pumpkin puree and mix. Add coconut oil and whisk. Add honey and whisk well.
- Add muesli, pumpkin seeds, dried cranberries, flaxseeds, cinnamon powder and oats and mix.
- Add wheat flour and mix. Add salt and mix well. Refrigerate for 1-2 hours.
- Preheat oven to 180º C.
- Divide the oats mixture into equal portions, shape into balls and flatten lightly. Place them on a baking tray.
- Place the tray in the preheated oven and bake for 15-18 minutes. Remove from oven and cool.
- Serve or store in an air-tight jar.
