Ingredients
- 2 medium apples, cored, quartered and thinly sliced
- 8-10 fresh button mushrooms, sliced
- 1 orange
- 3/4 cup bean sprouts
- 1 medium carrot, thinly sliced
- 2 medium tomatoes, quartered & sliced
- 2 medium spring onions with greens, sliced
- 2 tablespoons lemon juice
- 8 lettuce leaves
- 1 tablespoon salad oil
- 2 tablespoons chopped fresh coriander leaves
- 2 dried red chillies, seeded, thin strips
- 2 tablespoons chopped fresh mint leaves,
- Salt to taste
Method
- Sprinkle a little lemon juice on the apple and mushroom slices and mix lightly. Peel the orange and discard the seeds and pith. Cut the segments into two. Trim the lettuce leaves, wash in flowing water and soak in chilled water, to keep them fresh and crisp. Mix the remaining lemon juice, salad oil, red chilli flakes, coriander and mint leaves.
- Add salt to taste. Whisk well. Drain the lettuce leaves and tear them into bite sized pieces. Make a bed of these leaves on the serving dish. Lace with one-fourth part of the dressing. Combine apples, mushrooms, orange, bean sprouts, carrot, tomatoes and spring onions.
- Toss them in the remaining dressing and place it on the lettuce bed. Serve immediately.
