If there is one vegetable that is truly a nutritional hero then it is bound to be the carrot. A goldmine of nutrients, this is the reason they can be even termed as worth the other ‘karat’ (as in gold)! Ranging in colours from orange, black, pink to red, yellow and white, this delicious vegetable is within the reach of rich and poor alike and is rightly called the universal root. The best role that this winter vegetable can play – chomp on one as it is an excellent snack!

Ingredients for Golden Pineapple Carrot Coffee Cake Recipe

  • Carrots canned, chopped 250 grams

  • Pineapple grated 1 cup

  • Orange juice 1/3 cup

  • Sugar 1/3 cup

  • Coffee powder 1/2 teaspoon

  • Egg 1

  • All purpose flour 1 1/2 cups

  • Soda bicarbonate 1 1/2 teaspoons

  • Cinnamon powder 1 teaspoon

  • Salt 1/4 teaspoon

  • Oil 3 tablespoons

  • Topping

  • Sugar 1/3 cup

  • Walnuts finely chopped 1/3 cup

  • Cinnamon powder 3/4 teaspoon


Step 1

Preheat oven to 180°C. Grease a cake tin with oil. In a medium sized bowl mix together grated carrot, chopped pineapple. Add orange juice and mix. Add sugar, coffee powder and mix.

Step 2

Break the egg into it and mix. Sieve flour and baking soda into the egg mixture. Mix with a light hand. Add cinnamon powder, a pinch of salt and mix. Add oil and mix. Pour the batter into the greased cake tin.

Step 3

In another bowl mix together chopped walnuts, sugar and cinnamon powder. Sprinkle this over the cake batter. Bake in the preheated oven at 180°C for twenty to twenty five minutes. Cool slightly.

Step 4

Slice and serve.
