By Sanjeev Kapoor 16 Nov 2016 in Recipes Course New Update Main Ingredients Carrots, Split Green Gram Skinless Cuisine Kerala Course Raitas Prep Time 51-60 minutes Cook time 6-10 minutes Serve 4 Taste Tangy Level of Cooking Easy Others Veg Advertisment Ingredients list for Gajarachi Pachadi 2 medium Carrots 2 tablespoons Split Green Gram Skinless 2-3 Green chillies 1/4 medium bunch Fresh coriander leaves 1/2 teaspoon Red chilli powder to taste Salt 1 teaspoon Lemon juice 1 tablespoon Coconut scraped For tempering 2 teaspoons Ghee 1/2 teaspoon Mustard seeds a pinch Asafoetida 1/2 teaspoon Turmeric powder Method Advertisment Pick moong dal, wash two to three times with plenty of water and soak in water for an hour. Drain. Peel carrots, wash and grate them. Remove stems, wash green chillies and chop finely. Clean coriander leaves, wash well and then chop. Combine grated carrot, soaked moong dal, chopped green chillies, red chilli powder and salt together. Blend the above mixture, add lemon juice and check the seasoning. For tempering heat ghee in a pan, add mustard seeds. When they crackle add asafoetida, turmeric powder and stir. Take off the heat, add to prepared carrot mixture. Mix it well. Serve garnished with chopped coriander leaves and scraped coconut.
