Ingredients list for Fritata

  • 4 Eggs
  • Spinach Leaves
  • to taste Salt
  • 1 teaspoon Black pepper powder
  • 1 medium Onion
  • 6 Mushrooms
  • 2 tablespoons Olive oil
  • 10-12 Spinach leaves (palak)
  • 6-8 florets Broccoli blanched
  • 4 Black olives

Method

  1. Preheat oven to 180°C.Break eggs into a bowl and beat. Add salt and pepper powder and mix. Halve onion and then cut into thick slices. Quarter mushrooms.
  2. Heat olive oil in a non stick pan, add onion and sauté. Chop spinach roughly. Chop broccoli. Add mushroom and broccoli to the pan. Slice olives.
  3. Add spinach leaves to the pan and mix. Pour eggs into the pan. Arrange the olive slices on top and keep the preheated oven and bake for 15 minutes.
  4. Serve hot.
