Spanish cuisine is the result of a great variety of cooking cultures that have been living together in Spain.  The different climates and ways of life of each region to have played their role.  Some of the main ingredients that make up Spanish food are vegetables, meat and fish. 
Over the centuries Spain has been invaded by Romans, French, Moors, Phoenicians who introduced new cooking styles and ingredients in the Spanish cuisine, but the Spanish food is also influenced by other cultures. Spaniards were the main colonizers of America, Columbus was Spanish!  
The discovery of the New World brought new essential ingredients to the Mediterranean gastronomy like tomato, potato, chocolate that are now commonly used in a lot of Spanish dishes.

Ingredients for Fideuà Recipe

  • Spaghetti 150 grams

  • Eggplant 1 medium

  • Extra-virgin olive oil 2 tablespoons

  • Tomato 1 medium

  • Onions sliced 1 1/2 medium

  • Carrot 1 medium

  • Green zucchini 1 medium

  • Garlic cloves 4-5

  • Salt to taste

  • Cumin powder 1 teaspoon

  • Red chilli powder 1 teaspoon

  • Vegetable stock 2 cups

  • Few strands of saffron

  • Crushed black peppercorns to taste

  • Lemon juice for drizzling

  • Lemon slices for garnishing

Method

Step 1

Heat extra-virgin olive oil in a non-stick paella pan. Roughly chop tomato.

Step 2

Add onions to the pan and sauté till translucent.

Step 3

Slice carrot and cut zucchini in big cubes.

Step 4

Roughly chop garlic and add to the pan and sauté further till lightly browned. Add carrot and mix well.

Step 5

Cut eggplant in big cubes.

Step 6

Add tomato, zucchini cubes and eggplant cubes to the pan and mix well. Add salt and mix well.

Step 7

Roughly break spaghetti and add to the pan.

Step 8

Add cumin powder, red chilli powder and vegetable stock and mix well. Add saffron and mix well. Add crushed peppercorns and mix well. Cover and cook on medium heat till the vegetables and spaghetti are done.

Step 9

Remove the pan from heat, drizzle lemon juice, garnish with lemon slices and serve immediately.
