Middle Eastern cuisine comprises of food eaten by the people of the various countries of the Middle East. The cuisine of the region is diverse while having a degree of homogeneity.  Some commonly used ingredients include olives and olive oil, pitas, honey, sesame seeds, dates, sumac, chickpeas, mint and parsley.

Ingredients for Falafel Waffle Recipe

  • Chickpeas (kabuli chane) soaked overnight and drained 1 cup

  • Garlic cloves peeled 7-8

  • Medium onion chopped 1

  • Salt to taste

  • Cumin powder 1 1/2 teaspoons

  • Black peppercorns crushed to taste

  • Fresh parsley chopped 2 tablespoons

  • Oil for drizzling

  • Salad to serve

  • Pickled beetroot to serve

  • French fries to serve

  • Garlic aioli to serve

  • Micro greens to garnish


Step 1

Put chickpeas into a food processor jar, add garlic, onion, salt, cumin powder, crushed black peppercorns and parsley and process to a coarse paste.

Step 2

Heat a non-stick waffle iron, grease it with oil and spread some chickpea mixture evenly.

Step 3

Drizzle a little more oil, close the lid and cook for 8-10 minutes or till golden and crisp. Make more waffles similarly.

Step 4

Transfer them onto individual serving plates, garnish with micro greens and serve hot with salad, pickled beetroot, French fries and garlic aioli.
