You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Egg and Chips Recipe

  • Eggs 3

  • Potato chips to serve

  • Corn chips to garnish

  • Extra virgin olive oil 1 tablespoon

  • Medium onion 1

  • Medium tomatoes 2

  • Garlic cloves 2-3

  • Salt to taste

  • Tomato ketchup 2 tablespoons

  • Brown bread 1 slice

  • Fresh parsley 3-4 sprigs

  • Black peppercrons crushed to taste

  • Fresh coriander leaves roughly chopped for garnishing

Method

Step 1

Heat extra virgin olive oil in a non-stick pan. Slice onion and add and sauté till it turns translucent.

Step 2

Finely chop tomatoes. Roughly chop garlic and add to the pan and sauté for a minute.

Step 3

Add tomatoes and salt and saute till they become soft. Add a little water and tomato ketchup and mix well.

Step 4

Cut bread slices into small cubes and arrange them in the center of a serving plate.

Step 5

Finely chop parsley sprigs and add to the pan and mix well. Add crushed peppercorns and mix again.

Step 6

Break eggs over the tomato gravy. Cover and cook till eggs and tomatoes are fully done.

Step 7

Arrange potato chips around the bread on the serving platter.

Step 8

Switch off heat and slowly transfer the eggs on top of the bread. Crush corn chips and put on top of the eggs. Garnish with coriander leaves and serve hot.
