Ingredients list for Egg Sandwich

  • 4 Eggs boiled and peeled
  • 4 Brown bread slices
  • 3 tablespoons Butter softened
  • to taste Salt
  • to taste Black peppercorns crushed
  • 2 Spring onion green stalks chopped
  • to serve Tomato ketchup

Method

  1. Take butter in a bowl, beat it with an electric beater till it becomes light and fluffy.
  2. Grate the eggs into the bowl, add salt, crushed black peppercorns and spring onion greens and mix well.
  3. Keep the brown bread slices on the worktop and evenly spread a generous portion of egg mixture on 2 slices. Cover each slice with another slice and press lightly. Trim the edges of the breads and halve each sandwich vertically.
  4. Arrange the sandwiches on a serving plate and serve immediately with tomato ketchup.
