Grate the eggs into the bowl, add salt, crushed black peppercorns and spring onion greens and mix well. Keep the brown bread slices on the worktop and evenly spread a generous portion of egg mixture on 2 slices. Cover each slice with another slice and press lightly. Trim the edges of the breads and halve each sandwich vertically.
