  • 225 grams Dark chocolate melted
  • 75 grams Refined flour (maida)
  • + for greasing Butter 225 grams
  • 325 grams Castor sugar (caster sugar)
  • 1 teaspoon Vanilla essence
  • 200 grams Almond powder
  • 1 teaspoon Baking powder
  • Dark chocolate ganache:
  • 100 grams Cocoa powder
  • 125 grams Butter
  • 175 grams Castor sugar (caster sugar)
  • 275 grams Icing sugar
  • 6 Eggs

Method

  1. Preheat oven to 160ºC. Grease a baking tin with some butter and line it with a parchment paper.
  2. Cream together butter and castor sugar in a bowl.
  3. Break the eggs, one by one, add the yolks to the butter mixture and put the whites in a separate bowl. Whisk the egg yolks with the butter mixture well. Add melted dark chocolate and vanilla essence and whisk again. Add almond powder and fold in well.
  4. Sieve together refined flour and baking powder into the bowl and fold in well.
  5. Whisk egg whites with an electric blender till light and fluffy. Add to the chocolate mixture, a little at a time, and fold in well.
  6. Pour the batter into the prepared tin and level it out. Place the tin in the preheated oven and bake for 1 hour.
  7. Demould and discard the parchment paper. Set aside to cool.
  8. To prepare dark chocolate ganache, pour 100 ml water into a bowl. Add butter and castor sugar and cook on a double boiler till butter melts and the mixture gets a syrupy consistency.
  9. Sift icing sugar and cocoa powder into another bowl. Add the melted butter and whisk well. Pour the ganache over the cake and spread evenly.
  10. Serve.
