Ingredients list for Corn Pudding

  • 1 tin Sweet corn
  • 3-4 Spring onions
  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • 2 teaspoons Refined flour (maida)
  • 1 cup Milk
  • to taste Salt
  • 3 Eggs
  • to taste Crushed black peppercorns

Method

  1. Preheat the oven to 180°C. Chop spring onion greens and bulbs. Heat butter and olive oil in a non stick pan. Add refined flour and saute till raw smells disappear but flour does not get coloured.
  2. Add milk, little by little, and stir well to prevent lumps. Add spring onion greens and bulbs and mix well. Cook till the sauce thickens. Transfer the sauce into a bowl. Drain and add sweet corn and mix well. Add salt and mix.
  3. Break eggs into the bowl and mix well.Pour the batter into a baking dish. Sprinkle some sweet corn on top and bake in the preheated oven for ½ hour. Cool, slice and serve.
