Ingredients list for Coconut Rice Fritters
- 1/3 cup Desiccated Coconut
- 2/3 cup Cooked Rice
- 3 tablespoons Sugar
- 1/2 cup Coconut milk
- 1/2 cup Dark chocolate chopped
- to deep fry Oil
- to sprinkle Icing sugar
Method
- Place the desiccated coconut, cooked rice, sugar and coconut milk in a bowl and mix well.
- Divide the mixture into equal portions.
- Stuff each portions with a spoonful of chocolate and shape them into balls.
- Heat sufficient oil in a kadai and deep-fry the fritters till golden brown.
- Drain on absorbent paper. Sprinkle icing sugar on top and serve hot.
