Ingredients list for Choco Bite Muffins
- 30 grams Dark chocolate chopped
 - 3 Eggs
 - 100 grams Dark chocolate slab
 - 185 grams Sugar
 - 200 grams Butter
 - 175 grams + 2 tablespoons Refined flour (maida)
 - ½ teaspoon Baking powder
 - ½ tablespoon Instant coffee powder
 
Method
- Preheat oven to 180° C.
 - Put butter, sugar and cream in a bowl and beat with an egg beater.
 - Break eggs into the mixture, one at a time, add vanilla essence and continue to beat.
 - Put chopped chocolate in a bowl and melt in a microwave.Temper it and add to the butter-sugar mixture and beat again to combine well.
 - In another small bowl, mix the coffee with little water and heat in a microwave for half a minute. Set aside to cool.
 - Sieve the flour and baking powder into the butter-sugar mixture and gently fold in till everything is well combined.
 - Add coffee decoction and gently fold into the mixture.
 - Roughly chop chocolate slab, mix half of it with two tablespoons refined flour and fold into the mixture.
 - Divide equally into muffin moulds, top it up with the remaining chopped chocolate slab and bake in the preheated oven at 180°C for approximately twenty minutes.
 - Remove the muffins from the moulds and place them on a serving dish. Serve immediately.
