Ever wondered why the phrase “say cheese” is used just before a photograph is clicked? Simply because ‘cheese’ makes one smile! Not only the word but cheese as a food makes a lot of palates happy. It is an inexpensive, versatile and nourishing food. We have our very own Indian version as well as the ones made from soy milk that are even healthier. Whichever form, this is one food that is loved by one and all!

Ingredients for Cheese Sables Recipe

  • Cheddar cheese grated 150 grams

  • Refined flour (maida) 1 1/2 cups

  • Salt a pinch

  • Paprika powder 1/2 teaspoon

  • Mustard powder 1/2 teaspoon

  • Cumin powder 1 teaspoon

  • Black pepper powder 1/2 teaspoon

  • Chilled butter diced 1 1/2 cups

  • Milk 1 tablespoon

  • Black and white sesame seeds 1 teaspoon


Step 1

Sieve flour, salt, paprika powder, mustard powder, cumin powder and pepper powder into a bowl. Add butter and mix well.

Step 2

Add cheese and half cup water and mix well. Knead into soft dough.

Step 3

Tap the dough lightly on worktop, roll into a log, wrap in cling film and keep in the refrigerator for two to three hours or till firm.

Step 4

Preheat oven to 180° C. Line a baking tray with parchment paper.

Step 5

Remove the cling film from the log, brush with milk and coat with sesame seeds.

Step 6

Slice the log into thick discs and arrange on the parchment paper, and spacing them well apart.

Step 7

Place the tray in the preheated oven and bake for twelve to fifteen minutes.

Step 8

Arrange the sables on a serving plate and serve warm.
