Calzone

Ingredients list for Calzone

  • + for dusting Refined flour (maida) 1¼ cups
  • 10 grams Yeast
  • to taste Salt
  • 50 grams Butter
  • 1 cup Paneer (cottage cheese) bhurji
  • Milk for sealing and wash

Method

  1. Add 1-2 tablespoons water to yeast and heat in the microwave for 10 seconds. Remove from heat and mix well.
  2. Put flour, salt, yeast and butter in a bowl. Add sufficient water and knead into a soft dough. Set aside for 5-10 minutes.
  3. Grease a baking tray with little oil.
  4. Divide dough into large portions and roll out into a large disc dusting with flour. Cut roundels from them using a round cutter.
  5. Place a roundel on a worktop and put a spoonful of bhurji on it. Apply milk on the edges and bring the edges together to make a crescent shape. Seal the edges by pressing with the help of a fork. Similarly make remaining calzones.
  6. Place calzones on greased tray and cover with a muslin cloth. Set aside to prove for 30 minutes.
  7. Preheat oven to 180°C.
  8. Apply milk wash on calzones and place tray in preheated oven. Bake for 15 minutes.
  9. Remove from heat and serve.
