Mexico, wild and barren in the north and sultry and hot in the south, offers a cuisine that reflects the culture of the country – colourful, rich, invigorating and always, always festive! 
The most common impression about Mexican food is that it is hot and wholesome and has many similarities with Indian food. And like Indian cuisine Mexican is not one single cuisine but many. There is a feast of flavours for the food lover as the waters of the Gulf of Mexico and the Pacific Ocean teem with fish, while the adjoining regions bloom with luscious fruit like pineapple and papayas. The high plateau yields wonderful vegetables and the north is cattle country…..and to bind all these in one single string are chillies…in every shape, colour and size, from the subtle to the strong, producing a signature to Mexican cuisine.

Ingredients for Breakfast Burritos Recipe

  • Whole wheat tortilla 4

  • Spicy chicken sausages 8-10

  • Onion 1 medium

  • Oil 2 tablespoons

  • Butter chilled 2 tablespoons

  • Eggs beaten 2

  • Broccoli blanched 16 florets

  • Cream 2 tablespoons

  • Salt to taste

  • Black pepper powder 1 teaspoon

  • Grated cheese 1/2 cup

  • Jalapeno 8-12 slices

  • Iceberg lettuce leaves a few

Method

Step 1

Heat oil in a non stick pan.

Step 2

Slice onion. Thinly slice sausages. Put onion and sausages in the pan and sauté.

Step 3

Take the pan off the heat. Add chilled butter and mix. Add eggs and cook, stirring, to scramble. Do not overcook.

Step 4

Add cream, salt and pepper powder and mix. Add cheese and mix. Keep a tortilla on the work top and put a portion of filling in the centre. Place 4 broccoli florets in a line followed by jalapeno slices and lettuce. Roll tightly.

Step 5

Make other burritos similarly and serve immediately.
