Some say Chinese cuisine is 400,000 years old going back to the Peking Man and his use of fire. Some other accounts of the history of Chinese cuisine takes the beginning to the Chinese stone age. However today Chinese cuisine enjoys the distinction of being the most popular in the world.

Each Chinese dish reflects a balance of taste, texture, aroma and colour. Be it sweet, sour, pungent, hot, salty or spicy – all the six basic flavours are incorporated deftly in all Chinese dishes.

Ingredients for Black Bean Sauce Recipe

  • Black Bean 3 tablespoons

  • Vegetable Stock 2 teaspoons

  • Vegetable stock 3/4 cup

  • Ginger roughly chopped 1/2 inch piece

  • Garlic roughly chopped 1 clove

  • Vinegar 2 tablespoons

  • Soy sauce 1 tablespoon

  • Salt to taste

  • Black pepper powder to taste

  • Sugar 2 teaspoons

Method

Step 1

Mix cornflour in a little vegetable stock and set aside. Mix black beans, ginger, garlic, vinegar, soy sauce, salt, pepper powder, sugar and remaining stock and blend in a mixer.

Step 2

Transfer into a pan, add the cornflour mixture and mix well. Simmer until thick.
