Ingredients for Batata Bhaji Recipe

  • Potatoes, parboiled and cubed 6-7 medium

  • Curry Leaves 3 tablespoons

  • Oil 3 tablespoons

  • Mustard seeds 1/2 teaspoon

  • Curry leaves 10

  • Split black gram skinless (dhuli urad dal) 2 tablespoons

  • Dried red chillies,broken 2

  • Onion, sliced 1 medium

  • Turmeric powder 1/4 teaspoon

  • Salt to taste

  • Scraped coconut 1/2 cup

  • Fresh coriander leaves,finely chopped a few

Method

Step 1

Heat the oil in a non stick pan, add the mustard seeds and let them splutter.

Step 2

Add the curry leaves and urad dal and sauté till the dal turns light brown. Add the red chillies, stir and add the onion and sauté till translucent.

Step 3

Add the turmeric powder. Stir well, add the potato cubes and salt. Stir well and cook covered for five minutes on low heat till the potatoes are done.

Step 4

Add the coconut and stir with a light hand. Remove from heat.

Step 5

Garnish with coriander leaves and serve hot.
