Ingredients list for Batata Bhaji

  • 6-7 medium Potatoes, parboiled and cubed
  • 3 tablespoons Curry Leaves
  • 3 tablespoons Oil
  • 1/2 teaspoon Mustard seeds
  • 10 Curry leaves
  • 2 tablespoons Split black gram skinless (dhuli urad dal)
  • 2 Dried red chillies,broken
  • 1 medium Onion, sliced
  • 1/4 teaspoon Turmeric powder
  • to taste Salt
  • 1/2 cup Scraped coconut
  • a few Fresh coriander leaves,finely chopped

Method

  1. Heat the oil in a non stick pan, add the mustard seeds and let them splutter.
  2. Add the curry leaves and urad dal and sauté till the dal turns light brown. Add the red chillies, stir and add the onion and sauté till translucent.
  3. Add the turmeric powder. Stir well, add the potato cubes and salt. Stir well and cook covered for five minutes on low heat till the potatoes are done.
  4. Add the coconut and stir with a light hand. Remove from heat.
  5. Garnish with coriander leaves and serve hot.
