Ingredients list for Basic Cookie Dough

  • 340 grams Refined flour (maida)
  • 170 grams Rice flour
  • 400 grams Butter
  • 170 grams Icing sugar
  • a few Vanilla essence

Method

  1. Preheat oven to 180°C.
  2. Take butter in a bowl. Add icing sugar and cream the mixture with an electric blender.
  3. Add vanilla essence and blend again.
  4. Sift together refined flour and rice flour into another bowl.
  5. Add flour mixture to butter-sugar mixture little by little and blend lightly till well mixed. Refrigerate the mixture for 1 hour.
  6. Divide dough into equal portions, shape them into balls and weigh them so that they are all of the same size. Pat them and shape into small cookies.
  7. Place cookies on a baking tray in a criss-cross way, place the tray in the preheated oven and bake for 20-25 minutes.
  8. Remove from heat, cool and serve or store in an airtight container for a week.
