Ingredients for Banana Walnut Crumb Muffins Recipe

  • Ripe Banana peeled and mashed 3

  • Walnuts coarsely chopped 1/4 cup

  • Refined flour (maida) 1 1/2 cups

  • Baking powder 1/2 teaspoon

  • Baking soda (soda bicarbonate) 1/2 teaspoon

  • Castor sugar 3/4 cup

  • Egg whisked 1

  • Melted butter 1/3 cup

  • Cinnamon powder 1/2 teaspoon

  • For Crumb

  • Refined flour (maida) 2 tablespoons

  • Cinnamon powder 1 teaspoon

  • Butter 1 tablespoon


Step 1

Preheat oven to 190° C.

Step 2

Mix refined flour, baking powder and baking soda in a bowl and set aside.

Step 3

Mix bananas, castor sugar, whisked egg, butter, walnuts and cinnamon powder in another bowl.

Step 4

Add banana mixture, slowly, to the flour mixture and fold in lightly till well blended.

Step 5

To make the crumb, mix refined flour and cinnamon powder in a third bowl. Add butter and rub in with fingertips till the mixture resembles breadcrumbs.

Step 6

Spoon the batter into individual muffin moulds and place some crumb mixture on top of each. Place them on a baking tray, keep the tray in the preheated oven and bake for eighteen to twenty minutes.

Step 7

Remove from the moulds and serve.
