Baked Papaya With Spiced Walnut Filling

  • 2 small Papaya peeled halved and deseeded
  • 1 teaspoon Walnuts grated
  • 1 1/2 teaspoons Lemon juice
  • 2 tablespoons Oil sunflower
  • 2 teaspoons Ginger,ground
  • 2 teaspoons Cinnamon powder
  • 1/4 teaspoon Nutmeg,grated
  • 3 tablespoons Brown sugar
  • 1/2 cup Walnuts,chopped finely
  • 1 cup Brown bread crumbs
  • 1/2 cup Yogurt

  1. Preheat oven at 190°C. Roll up four pieces of aluminium foil into thin sausage shapes and use them to hold the halved papaya in an ovenproof dish.
  2. Mix lemon rind, lemon juice with sunflower oil, ginger, cinnamon, nutmeg and brown sugar. Stir in walnuts and breadcrumbs; mix until the crumbs are evenly moistened.
  3. Spoon the mixture into the halved papaya forming a heap. Bake for about twenty minutes, until the filling is browned. Serve hot with yogurt.
