Ingredients for Assorted Mithai Malpua Recipe

  • Assortted mithai 100 grams

  • Milk 2 1/2 cups

  • Mawa / Khoya 1/2 cup

  • semolina (suji / rawa) 1/4 cup

  • Sugar 1 cup

  • Saffron strands a few

  • Refined flour (maida) 1/2 cup

  • Ghee for frying

  • Blanched pistachio slivers for garnishing


Step 1

Boil milk in a non-stick pan, reduce heat and cook till milk reduces to half. Add the mawa / khoya and mix well.

Step 2

Remove from heat and cool down to room temperature. Add semolina, mix well and set aside for fifteen to twenty minutes.

Step 3

Cook sugar with one cup of water in a non-stick pan, stirring till sugar dissolves and the syrup reaches two string consistency. Add saffron and mix well.

Step 4

Add flour to the milk mixture and mix well. Break the assorted mithais into small pieces and add and mix well.

Step 5

Heat ghee in a non-stick pan, pour the mixture with a ladle and spread into small discs and cook, turning sides, till golden on both sides.

Step 6

Remove the malpuas and put them directly into the sugar syrup and let them soak the syrup.

Step 7

Serve hot garnished with pistachios.
