You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Ande ka Halwa Recipe

  • Eggs 8

  • Ghee 1/2 cup

  • Mixed dried fruits soaked 1 cup

  • Diet sugar 1/2 cup

  • Milk 1 cup

  • Green cardamom powder 1/2 teaspoon

  • Saffron (kesar) a few strands

Method

Step 1

Heat ½ cup ghee in a non stick pan, add assorted dried fruit and saute for about 5 minutes. Break the eggs, one by one, into the pan and cook stirring continuously.

Step 2

Add diet sugar and mix. Cook for about 2 minutes. Add milk and mix and cook for about 5 minutes or till all the milk gets absorbed. Add ½ tsp green cardamom powder and mix.

Step 3

Transfer into a serving bowl, garnish with saffron and serve hot.
