How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Acharya Khichdi Recipe

  • Rice soaked 1 cup

  • Split green gram with skin soaked 3/3 cup

  • Carrot, 1/2 inch cubes 1/2 medium

  • Potato, 1/2 inch cubes 1 medium

  • French beans, 1/2 inch pieces 4-5

  • Tomatoes, 1/2 inch pieces 2 medium

  • Ghee 2 tablespoons

  • Cloves 4

  • Cinnamon 1 inch stick

  • Turmeric powder 1/2 teaspoon

  • Red chilli powder 1 teaspoon

  • Cumin seeds 1 teaspoon

  • Salt to taste


Step 1

In a large microwave casserole, place rice, moong dal, carrot, potato, French beans, tomato, ghee, cloves, cinnamon, turmeric powder, red chilli powder, cumin seeds, salt and four cups of water.

Step 2

Stir once, cover and cook on Microwave HIGH (100%) for twenty minutes. Serve hot.
