Jackfruit Basundi

Basundi is a traditional Indian sweet dish that is made by reducing full fat milk to half and then flavoured variously. This is Sanjeev Kapoor exclusive recipe.

Ingredients

  • ½ cup ripe jackfruit puree
  • 4 tablespoons chopped ripe jackfruit + for garnish
  • 3½ cups low fat milk
  • Blanched, peeled and slivered pistachios for garnish

Method

  1. Cook milk in a non-stick pan till it reduces to half in volume. Add half the jackfruit puree and half the chopped jackfruit and mix well.
  2. Transfer into a bowl and allow to cool completely. Add remaining jackfruit puree and remaining chopped jackfruit and mix well. Refrigerate for 1-2 hours.
  3. Transfer into individual earthenware bowls, garnish with chopped jackfruit and pistachios and serve.
