Ingredients
- 35-40 black grapes
 - Ricotta cheese as required
 - 8 toasted baguette slices
 - 6-8 garlic cloves
 - 4 fresh thyme sprigs
 - 2 teaspoons olive oil
 - Salt to taste
 - Crushed black peppercorns to taste
 - 3 canned pineapple slices
 - Micro greens for garnish
 - Toasted pine nuts as required
 
Method
- Preheat oven to 180° C.
 - Spread grapes on a baking tray, add garlic cloves, thyme sprigs and drizzle olive oil over them.
 - Sprinkle salt and crushed black peppercorns on top and mix well. Keep the tray in the preheated oven and bake for 8-10 minutes.
 - Heat a non-stick grill pan. Place the pineapple slices in it, drizzle remaining olive oil over them. Sprinkle salt and crushed black peppercorns and grill for 2 minutes.
 - Flip and grill on other side for 2 minutes more. Chop roughly.
 - Place the baguette slices on a worktop and spread ricotta cheese evenly.
 - Arrange the grape mixture on top and place the grilled pineapple pieces on top.
 - Place some micro greens and pinenuts on top. Sprinkle crushed black peppercorns on top.
 - Drizzle the cooking liquid and serve.
