Ingredients list for Cucumber and Arugula Pinwheel Sandwiches
- 2 Cucumber peeled and sliced vertically
- 7-8 White bread slices
- 8 white bread slices
- 4 tablespoons mayonnaise
- to taste Crushed black peppercorns
- to taste Salt
- 2 tablespoons chopped capers
- 1 tablespoon chopped dill leaves
- Juice of ½ lemon
Method
- Discard edges of bread slices and soak them in water for some time. Squeeze the excess water.
- Spread a large cling film on the worktop and place the bread slices connecting the edges together so that it becomes a rectangle mat. Press the sides so that the slices stick to each other at the edges.
- Spread mayonnaise all over and sprinkle crushed peppercorns, salt, capers and chopped dill on top. Place cucumber slices, arugula leaves and again sprinkle salt, crushed peppercorns and lemon juice.
- Roll the arrangement tightly into a cylinder and seal the ends by tieing a knot at both ends. Refrigerate for 20-25 minutes.
- Slice the sandwich into medium pieces and serve immediately with tomato ketchup.
