Ingredients
- 1½ cup refined flour (maida)
- ½ cup oil
- Salt to taste
- 6 eggs
- 1½ cups milk
- Grilled chicken to serve
- Sautéed vegetables to serve
- Brown sauce to serve
Method
- Preheat the oven to 190˚C.
- Pour oil into each cavity of a cupcake mould, and place it in the hot oven for 15 minutes or till it smokes.
- Meanwhile, sieve refined flour into a large bowl. Add salt, break in the eggs and whisk till well combined.
- Add milk, a little at a time, and whisk continuously till you get a lump-free mixture.
- Strain the mixture into a pouring jar and pour into each cupcake cavity till ¾ full. Place it back in the oven and bake for 25 minutes.
- Place some grilled chicken and sautéed vegetables on each serving plate. Place 2-3 Yorkshire puddings on each serving plate, pour brown sauce on top of them and drizzle over the grilled chicken, and sautéed vegetables. Garnish with micro greens and serve hot.
