Yorkshire Pudding

A classic British side dish made from a simple batter of flour, eggs, and milk, baked until puffed and golden, perfect for soaking up gravy. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1½ cup refined flour (maida)
  • ½ cup oil
  • Salt to taste 
  • 6 eggs
  • 1½ cups milk
  • Grilled chicken to serve
  • Sautéed vegetables to serve
  • Brown sauce to serve

Method

  1. Preheat the oven to 190˚C.
  2. Pour oil into each cavity of a cupcake mould, and place it in the hot oven for 15 minutes or till it smokes.
  3. Meanwhile, sieve refined flour into a large bowl. Add salt, break in the eggs and whisk till well combined.
  4. Add milk, a little at a time, and whisk continuously till you get a lump-free mixture.
  5. Strain the mixture into a pouring jar and pour into each cupcake cavity till ¾ full. Place it back in the oven and bake for 25 minutes.
  6. Place some grilled chicken and sautéed vegetables on each serving plate. Place 2-3 Yorkshire puddings on each serving plate, pour brown sauce on top of them and drizzle over the grilled chicken, and sautéed vegetables. Garnish with micro greens and serve hot.
