Ingredients list for Wholesome Spaghetti
- 100 grams Spaghetti whole wheat, boiled
- to taste Salt
- 250 grams Boneless chicken breasts cut into1 inch pieces
- 1 teaspoon Worcestershire sauce
- 4 1/2 teaspoon Olive oil
- 6-8 Garlic cloves chopped
- 1/4 cup Tomato ketchup
- 1 small Green capsicum seeded and cut into 1 inch pieces
- 1 small Red capsicum seeded and cut into 1 inch pieces
- 1 small Yellow capsicum seeded and cut into 1 inch pieces
- 1 teaspoon Black pepper powder
- 5-6 Fresh basil leaves torn
- 1 large Onion chopped
- 4-5 Fresh button mushrooms sliced
- 1/2 cup Spinach blanched and chopped
- 3 tablespoons Cream
- 1 cup White sauce
- 1 cup Mozzarella cheese grated
Method
- Marinate the chicken pieces in Worcestershire sauce.
- Heat equal quantities of olive oil in two separate pans. Add equal quantity of garlic to both the pans and sauté.
- Add marinated chicken to one pan and sauté for five minutes. Add tomato ketchup and mix. Add the three coloured capsicums, salt and half the black pepper powder. Add basil leaves. Remove from heat when chicken is done.
- Add onion to the other pan and sauté. Add button mushrooms and continue to sauté for two to three minutes. Add spinach, cream, salt and remaining black pepper powder and mix. Remove from heat and set aside.
- Preheat oven to 200°C.
- Take a baking dish and spread half the white sauce at the base. Over this spread half the spaghetti and cover with the spinach and mushroom mixture.
- Spread half of the Mozzarella cheese and cover with remaining spaghetti and white sauce.
- Spread chicken mixture and cover with remaining Mozzarella cheese.
- Bake in the preheated oven for fifteen minutes.
- Serve hot.
