Ingredients for Whole Baked Rawas Recipe

  • Baby Rawas 1

  • Fresh Basil Leaves to taste

  • Crushed black peppercorns to taste

  • Garlic cloves 8-10

  • Sea salt to taste

  • Extra virgin olive oil 4 tablespoons

  • Dill leaves (suva) 6-8 sprigs

  • Fresh basil leaves 10-12

  • Lemons 2

Method

Step 1

Preheat the oven at 180° C. Slit the rawas from the centre horizontally.

Step 2

Sprinkle some salt and crushed black peppercorns and set aside.

Step 3

Coarsely grind together garlic, sea salt, 2 tbsp extra virgin olive oil, dill leaves, coriander leaves and basil leaves and apply the paste on the inside of the fish.

Step 4

Slice the lemons thinly and place some of them inside the fish.

Step 5

Set aside for some time to marinate.

Step 6

Make small slashes on either side of the fish and place the remaining lemon slices in them.

Step 7

Cover a baking tray with aluminium foil, pour some of the remaining extra olive oil over it.

Step 8

Place the fish on the tray and drizzle remaining olive oil over it.

Step 9

Bake in the preheated oven for 20-25 minutes and serve hot.
