Ingredients list for Whole Baked Rawas
- 1 Baby Rawas
- to taste Fresh Basil Leaves
- to taste Crushed black peppercorns
- 8-10 Garlic cloves
- to taste Sea salt
- 4 tablespoons Extra virgin olive oil
- 6-8 sprigs Dill leaves (suva)
- 10-12 Fresh basil leaves
- 2 Lemons
Method
- Preheat the oven at 180° C. Slit the rawas from the centre horizontally.
- Sprinkle some salt and crushed black peppercorns and set aside.
- Coarsely grind together garlic, sea salt, 2 tbsp extra virgin olive oil, dill leaves, coriander leaves and basil leaves and apply the paste on the inside of the fish.
- Slice the lemons thinly and place some of them inside the fish.
- Set aside for some time to marinate.
- Make small slashes on either side of the fish and place the remaining lemon slices in them.
- Cover a baking tray with aluminium foil, pour some of the remaining extra olive oil over it.
- Place the fish on the tray and drizzle remaining olive oil over it.
- Bake in the preheated oven for 20-25 minutes and serve hot.
