Ingredients list for Whole Baked Rawas

  • 1 Baby Rawas
  • to taste Fresh Basil Leaves
  • to taste Crushed black peppercorns
  • 8-10 Garlic cloves
  • to taste Sea salt
  • 4 tablespoons Extra virgin olive oil
  • 6-8 sprigs Dill leaves (suva)
  • 10-12 Fresh basil leaves
  • 2 Lemons


  1. Preheat the oven at 180° C. Slit the rawas from the centre horizontally.
  2. Sprinkle some salt and crushed black peppercorns and set aside.
  3. Coarsely grind together garlic, sea salt, 2 tbsp extra virgin olive oil, dill leaves, coriander leaves and basil leaves and apply the paste on the inside of the fish.
  4. Slice the lemons thinly and place some of them inside the fish.
  5. Set aside for some time to marinate.
  6. Make small slashes on either side of the fish and place the remaining lemon slices in them.
  7. Cover a baking tray with aluminium foil, pour some of the remaining extra olive oil over it.
  8. Place the fish on the tray and drizzle remaining olive oil over it.
  9. Bake in the preheated oven for 20-25 minutes and serve hot.
