Ingredients list for Tropical Delight

  • 240 millilitres White rum with coconut liqueur (coconut rum)
  • 240 millilitres Coconut milk
  • 4 tablespoons Mango puree
  • 4 tablespoons Mango chunks frozen
  • 8 teaspoons Lemon juice
  • 15-20 Ice cubes
  • to garnish Blue orchids
  • Rimming
  • as required Castor sugar
  • 2 Lemons
  • to garnish Lemon wedges


  1. For rimming the glass, spread castor sugar on a plate. Grate the zest of the lemons over it and mix well.
  2. Rub lemon wedges on the rims of the glasses and dip in the sugar-lemon zest mixture till the entire rim is well coated well. Set aside.
  3. To make one portion of the cocktail, pour 60 ml white rum with coconut liqueur into a blender jar, add 60 ml coconut milk, 1 tbsp mango puree, ½ cup frozen mango chunks, 2 tsps lemon juice and a few ice cubes and blend into a smooth and thick mixture.
  4. Pour into a prepared glass and garnish with a blue orchid and serve immediately.
