By Sanjeev Kapoor 24 Mar 2021 in Recipes Course New Update Advertisment Main Ingredients White rum with coconut liqueur (coconut rum), Coconut milk Cuisine Fusion Course Beverages Prep Time 7-8 hour Cook time 0-5 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Veg Ingredients list for Tropical Delight 240 millilitres White rum with coconut liqueur (coconut rum) 240 millilitres Coconut milk 4 tablespoons Mango puree 4 tablespoons Mango chunks frozen 8 teaspoons Lemon juice 15-20 Ice cubes to garnish Blue orchids Rimming as required Castor sugar 2 Lemons to garnish Lemon wedges Method For rimming the glass, spread castor sugar on a plate. Grate the zest of the lemons over it and mix well. Rub lemon wedges on the rims of the glasses and dip in the sugar-lemon zest mixture till the entire rim is well coated well. Set aside. To make one portion of the cocktail, pour 60 ml white rum with coconut liqueur into a blender jar, add 60 ml coconut milk, 1 tbsp mango puree, ½ cup frozen mango chunks, 2 tsps lemon juice and a few ice cubes and blend into a smooth and thick mixture.
