Ingredients for Tropical Delight Recipe

  • White rum with coconut liqueur (coconut rum) 240 millilitres

  • Coconut milk 240 millilitres

  • Mango puree 4 tablespoons

  • Mango chunks frozen 4 tablespoons

  • Lemon juice 8 teaspoons

  • Ice cubes 15-20

  • Blue orchids to garnish

  • Rimming

  • Castor sugar as required

  • Lemons 2

  • Lemon wedges to garnish


Step 1

For rimming the glass, spread castor sugar on a plate. Grate the zest of the lemons over it and mix well.

Step 2

Rub lemon wedges on the rims of the glasses and dip in the sugar-lemon zest mixture till the entire rim is well coated well. Set aside.

Step 3

To make one portion of the cocktail, pour 60 ml white rum with coconut liqueur into a blender jar, add 60 ml coconut milk, 1 tbsp mango puree, ½ cup frozen mango chunks, 2 tsps lemon juice and a few ice cubes and blend into a smooth and thick mixture.

Step 4

Pour into a prepared glass and garnish with a blue orchid and serve immediately.
