Ingredients
- 4 medium tomatoes, blanched and peeled
- 10-12 basil leaves
- 250 grams paneer (cottage cheese) , cut into cubes
- 2 tablespoons oil
- 2 tablespoons chopped garlic
- 1/2 cup tomato puree
- Salt to taste
- Crushed black peppercorns to taste
- 2 tablespoons red chilli flakes
- 1/4 cup cream
Method
- Chop tomatoes and put in a blender jar. Blend into a smooth puree.
- Heat oil in a non stick pan, add garlic and sauté for ½ minute. Add onions and sauté till lightly browned.
- Add freshly pureed tomatoes and tomato puree and mix well.
- Add salt and crushed black peppercorns and mix well. Add paneer and mix well.
- Add red chilli flakes, basil leaves and cream. Mix well and cook for 1 minute.
- Serve hot.
