Ingredients for Tofu Omelette Recipe

  • Silken tofu 100 grams

  • Eggs 8

  • Medium onion 1

  • Oil 4 teaspoons

  • Small green capsicum chopped 1/4

  • Small red capsicum chopped 1/4

  • Salt to taste

  • Tata Sampann Pav Bhaji Masala 2 teaspoons

  • Fresh coriander leaves finely chopped 2 tablespoons

  • Cherry tomatoes to garnish

  • Fresh parsley sprigs to garnish

Method

Step 1

Finely chop onion.

Step 2

Heat 2 teaspoons oil in a non-stick pan, add onion and sauté for a minute.

Step 3

Separate egg yolks and whites and put into two separate bowls.

Step 4

Add green and red capsicum to the pan and sauté.

Step 5

Add salt to egg whites and beat well.

Step 6

Add Tata Sampann Pav Bhaji Masala to the pan and mix well. Add tofu, mash and cook for 2-3 minutes. Remove from heat and set aside.

Step 7

To make each portion, heat 1 teaspoon oil in another non-stick pan. Add ¼ of the beaten egg whites, spread into a disc and cook a little.

Step 8

Put ¼ of the tofu mixture in centre and sprinkle ½ tablespoon coriander leaves. Cover and cook for 2 minutes.

Step 9

Fold the omelette, garnish with cherry tomatoes and parsley sprig. Serve hot.
