Ingredients list for Thai Style Basa
- 2 Basa fillets cut into 1 inch cubes
- 3 tablespoons Oil
- to taste Salt
- 2 teaspoons Lemon juice
- a few Kaffir lime leaves
- 1 medium Onion finely chopped
- 2 inches Ginger chopped
- 2 teaspoons Red curry paste
- 1 cup Thin coconut milk
- a few fried basil leaves
Method
- Heat 2 tbsps oil in a non stick pan. Sprinkle salt and 1 tsp lemon juice over the basa pieces and rub them in well.
- Crush kaffir lime leaves lightly and keep one leaf one on each basa piece. Put the pieces in the pan and cook. Heat remaining oil in another non stick pan, add onion and ginger and saute.
- Turn the basa pieces over and cook the other side too.
Saute the onion-ginger for 1 minute. Add red curry paste and mix. Add coconut milk and mix well and cook till the sauce thickens. Add remaining lemon juice and mix. Adjust salt. - For each serving arrange 3 basa pieces one over the other with a lime leaf between each on serving plate. Pour the sauce all around them. Garnish with deep fried basil leaves and serve hot.
