Ingredients
- 8-10 snow peas, sliced diagonally
- 5-6 straw mushrooms, halved
- ¼ small cabbage, cut into half-inch cubes
- 1 tablespoon oil
- 2 lemon grass stalks, sliced
- 1-inch piece bamboo shoot (optional)
- 4 kaffir lime leaves
- 1 tablespoon Red Curry Paste
- Salt to taste
- 4 fresh red chillies, sliced diagonally
- 2 tablespoons lemon juice
- 2 sprigs fresh coriander leaves
Method
- Heat oil in a pan. Add snow peas, straw mushrooms, lemon grass and bamboo shoot and toss to mix. Bruise kaffir lime leaves; add to the pan and mix.
- Stir in the red curry paste. Add four cups of water and bring the mixture to a boil; add cabbage and salt. Stir again and add fresh red chillies.
- Remove from heat and add lemon juice.Tear coriander leaves roughly and add to the soup.Stir and serve piping hot.
