Ingredients list for Thai Fried Rice with Pineapple
- 1 1/2 cups Cooked Rice
- 1 1/2 cups Cooked Basmati Rice
- 6 Pineapple slices tinned
- 2 tablespoons Oil
- 1 medium Onion chopped
- 1/4 medium Green capsicum
- 1/4 medium Green capsicum
- 1/4 medium Red capsicum
- 1/4 cup Roasted peanuts
- 1 teaspoon Green curry paste
- 2 Thai red bird chillies
- 3 Kaffir lime leaves
- to taste Salt
- 2 teaspoons Brown sugar
- 7-8 Fresh basil leaves
- 1 Lemon
Method
- Heat oil in a non stick pan, add onion and saute. Roughly chop red and green capsicums. Add green curry paste to the pan and mix well. Add red and green capsicums.
- Grind roasted peanuts and Thai red bird chillies. Chop pineapple slices and add to the pan. Slice kaffir lime leaves and add.
- Add cooked Thai rice and cooked basmati rice and mix well. Add salt, brown sugar, peanut mixture and toss well. Tear basil leave and add.
- Squeeze the juice of 1 lemon and then add their skins to the rice. Mix well and serve hot.
