Taquitos

A Mexican snack – spicy corn mixture and cheese wrapped in tortillas and baked. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Taquitos

  • 8 Tortillas mini
  • 1 tablespo for greasing Olive oil
  • 1 tablespoon Garlic chopped
  • 3 tablespoons Corn kernels boiled
  • 4 Asparagus blanched and chopped
  • 1 teaspoon Pickled jalapenos chopped
  • 1 teaspoon Mixed herbs
  • to taste Salt
  • ¼ cup Baked beans
  • 2 tablespoons Mozzarella cheese grated
  • 2 tablespoons Processed cheese grated

Method

  1. Preheat oven to 180° C.
  2. Heat olive oil in a non-stick pan. Add garlic and sauté for 30 seconds. Add corn kernels, asparagus, jalapeno, mixed herbs, salt and baked beans, mix and cook for 1 minute.
  3. Switch off heat, add mozzarella cheese and processed cheese and mix well.
  4. Put some corn kernel mixture on one side of each tortilla, wrap and insert 2 toothpicks to secure.
  5. Grease a baking tray with some olive oil, place the tortilla wraps and brush some olive oil on top. Place the baking tray in the preheated oven and bake for 5 minutes.
  6. Serve hot.
