Ingredients list for Sweet Potato Wedges
- 5-6 Sweet potatoes
- 1/3 cup Olive oil
- For Spice mix
- 2 teaspoons Coriander seeds
- to taste Sea salt
- ½ teaspoon Paprika powder
- 1½ teaspoons Dried oregano
- to taste Crushed black peppercorns
Method
- Preheat oven to 200ºC.
- To make spice mix, dry roast coriander seeds till fragrant. Transfer into a mortar, add sea salt and coarsely grind with a pestle. Add paprika powder, oregano and crushed peppercorns and mix. Transfer into a bowl and set aside.
- Cut sweet potatoes into wedges along with skin and place them on a baking tray. Sprinkle spice mix over the wedges and drizzle olive oil on top. Mix.
- Put the tray in preheated oven and roast for 20-30 minutes.
- Serve hot.
