By Sanjeev Kapoor 23 Feb 2016 in Recipes Non Veg New Update Main Ingredients Refined Flour, Dessicated Coconut Cuisine Karnataka Course Desserts Prep Time 16-20 minutes Cook time 31-40 minutes Serve 4 Taste Sweet Level of Cooking Moderate Others Non Veg Ingredients list for Strawberry Coconut Bars 1 1/4 cups Refined Flour 1/2 teaspoon Dessicated Coconut 1 teaspoon Baking powder 1 teaspoon + 1 cup Sugar 1/2 cup + 6 tablespoons Butter 3 Eggs 2 tablespoons Milk 1 cup Strawberry jam thick 2 teaspoons Vanilla essence 2 1/2 cups Sweetened desiccated coconut Method Preheat oven at 180°C. Sift flour, salt and baking powder together. Add one-teaspoon sugar. Break eggs and separate one egg yolk. Beat together butter, egg yolk and milk. Fold the flour mixture into it. Press the mixture into a greased rectangular pan. Spread strawberry jam over, leaving an edge of about a quarter inch all around pan. In a separate bowl beat remaining eggs and one cup of sugar until thick and lemon coloured. Pour in vanilla essence and six tablespoon of melted butter. Blend in desiccated coconut. Spread the above mixture evenly over the jam layer. Bake in preheated oven at 180°C for about half an hour, or until the top is golden brown and set. Cool and cut into squares and serve.
