Ingredients list for Sticky Prune Cake
- 1 packet Prunes
- Refined flour
- 1 teaspoon Baking soda
- 180 grams Butter
- 1 cup Brown sugar
- 2 tablespoons Vanilla essence
- 4 Eggs
- 2 cups Refined flour (maida)
Method
- Preheat oven to 180°C. Quarter each prune. Heat 1 cup water in a non stick pan, add prunes and baking soda and switch off the heat. Stir and let it stand for 15 minutes.
- Place butter and brown sugar in a bowl and beat with hand blender. Add vanilla essence and continue to beat till light and fluffy. Break 2 eggs and add to the bowl and continue to beat. Break the remaining eggs into the bowl and beat.
- Sieve refined flour into the bowl and mix with a spoon. Then mix with the hand blender. Add the prune mixture and continue to mix till well blended. Pour the batter into a silicon mould and bake in the preheated oven for 50-55 minutes.
- Check if it is done. If it is not done, bake for 5 minutes more.
- Cool, slice and serve.
