Ingredients for Sticky Prune Cake Recipe

  • Prunes 1 packet

  • Refined flour

  • Baking soda 1 teaspoon

  • Butter 180 grams

  • Brown sugar 1 cup

  • Vanilla essence 2 tablespoons

  • Eggs 4

  • Refined flour (maida) 2 cups

Method

Step 1

Preheat oven to 180°C. Quarter each prune. Heat 1 cup water in a non stick pan, add prunes and baking soda and switch off the heat. Stir and let it stand for 15 minutes.

Step 2

Place butter and brown sugar in a bowl and beat with hand blender. Add vanilla essence and continue to beat till light and fluffy. Break 2 eggs and add to the bowl and continue to beat. Break the remaining eggs into the bowl and beat.

Step 3

Sieve refined flour into the bowl and mix with a spoon. Then mix with the hand blender. Add the prune mixture and continue to mix till well blended. Pour the batter into a silicon mould and bake in the preheated oven for 50-55 minutes.

Step 4

Check if it is done. If it is not done, bake for 5 minutes more.

Step 5

Cool, slice and serve.
