Ingredients for Sticky Date Pudding Recipe

  • Orange Juice 2 cups

  • Dates pitted and chopped 1 cup

  • Baking soda 1/2 teaspoon

  • Refined flour (maida) 1 cup

  • Softened butter 90 grams

  • Vanilla essence 1/2 teaspoon

  • Soft brown sugar 1/2 cup

  • Eggs 2

  • For sauce

  • Butter 90 grams

  • Soft brown sugar 1 cup

  • Cream 1 cup

Method

Step 1

Preheat oven to 180° C.

Step 2

Heat orange juice in a non-stick pan. Place dates in a large mixing bowl, add soda and mix.

Step 3

When the orange juice starts boiling add it to dates and let them soak.

Step 4

To make the sauce, heat butter in another non-stick pan, add soft brown sugar and stir till the sugar melts. Add cream and cook, stirring, till well blended.

Step 5

Sift refined flour into the bowl with date mixture. Add softened butter and mix well.

Step 6

Add vanilla essence and brown sugar and mix well. Break eggs and add and mix well.

Step 7

Grease an ovenproof dish, pour the batter into it and cook in the preheated oven for 1½ hours.

Step 8

Serve the pudding warm with the sauce.
