Ingredients list for Sticky Date Pudding

  • 2 cups Orange Juice
  • 1 cup Dates pitted and chopped
  • 1/2 teaspoon Baking soda
  • 1 cup Refined flour (maida)
  • 90 grams Softened butter
  • 1/2 teaspoon Vanilla essence
  • 1/2 cup Soft brown sugar
  • 2 Eggs
  • For sauce
  • 90 grams Butter
  • 1 cup Soft brown sugar
  • 1 cup Cream

Method

  1. Preheat oven to 180° C.
  2. Heat orange juice in a non-stick pan. Place dates in a large mixing bowl, add soda and mix.
  3. When the orange juice starts boiling add it to dates and let them soak.
  4. To make the sauce, heat butter in another non-stick pan, add soft brown sugar and stir till the sugar melts. Add cream and cook, stirring, till well blended.
  5. Sift refined flour into the bowl with date mixture. Add softened butter and mix well.
  6. Add vanilla essence and brown sugar and mix well. Break eggs and add and mix well.
  7. Grease an ovenproof dish, pour the batter into it and cook in the preheated oven for 1½ hours.
  8. Serve the pudding warm with the sauce.
