Ingredients list for Sticky Date Pudding
- 2 cups Orange Juice
- 1 cup Dates pitted and chopped
- 1/2 teaspoon Baking soda
- 1 cup Refined flour (maida)
- 90 grams Softened butter
- 1/2 teaspoon Vanilla essence
- 1/2 cup Soft brown sugar
- 2 Eggs
- For sauce
- 90 grams Butter
- 1 cup Soft brown sugar
- 1 cup Cream
Method
- Preheat oven to 180° C.
- Heat orange juice in a non-stick pan. Place dates in a large mixing bowl, add soda and mix.
- When the orange juice starts boiling add it to dates and let them soak.
- To make the sauce, heat butter in another non-stick pan, add soft brown sugar and stir till the sugar melts. Add cream and cook, stirring, till well blended.
- Sift refined flour into the bowl with date mixture. Add softened butter and mix well.
- Add vanilla essence and brown sugar and mix well. Break eggs and add and mix well.
- Grease an ovenproof dish, pour the batter into it and cook in the preheated oven for 1½ hours.
- Serve the pudding warm with the sauce.
