Ingredients list for Sticky Date Pudding
- 3/4 cup Dates chopped
- 90 grams + tablespoon Butter
- 1 1/2 cups for dusting Refined flour
- 1/2 teaspoon Baking soda
- 1 cup + 2 tablespoons Brown sugar
- 2 Eggs
- 1 teaspoon Vanilla essence
- 3/4 cup Fresh cream
- to serve Ice cream scoops
- to serve Fresh mint sprigs
Method
- Preheat oven to 180° C. Grease a baking dish and dust it with some flour.
- Take dates in a bowl, add baking soda and sufficient water and let them soak.
- Take butter in a mixing bowl, add 1 cup brown sugar and beat together with an electric beater until creamy.
- Break in the eggs and add vanilla essence and continue to beat till well incorporated.
- Add refined flour and fold in with a spatula till there are lumps.
- Add the soaked dates and fold in again.
- Pour the prepared batter into the lined baking dish, place it in the preheated oven and bake for 10-15 minutes.
- Heat the remaining brown sugar in a non-stick pan and heat till it caramelises. Add fresh cream and mix well. Add butter and mix till it melts.
- Bring the baking dish out of the oven and pour this sauce over the pudding. Place the dish back in the hot oven and bake again for 45-50 minutes.
- Cut into squares, place each square in a serving plate, place a scoop of vanilla ice-cream over it, garnish with a mint sprig and serve
