Ingredients for Sticky Date Pudding Recipe

  • Dates chopped 3/4 cup

  • Butter 90 grams + tablespoon

  • Refined flour 1 1/2 cups for dusting

  • Baking soda 1/2 teaspoon

  • Brown sugar 1 cup + 2 tablespoons

  • Eggs 2

  • Vanilla essence 1 teaspoon

  • Fresh cream 3/4 cup

  • Ice cream scoops to serve

  • Fresh mint sprigs to serve


Step 1

Preheat oven to 180° C. Grease a baking dish and dust it with some flour.

Step 2

Take dates in a bowl, add baking soda and sufficient water and let them soak.

Step 3

Take butter in a mixing bowl, add 1 cup brown sugar and beat together with an electric beater until creamy.

Step 4

Break in the eggs and add vanilla essence and continue to beat till well incorporated.

Step 5

Add refined flour and fold in with a spatula till there are lumps.

Step 6

Add the soaked dates and fold in again.

Step 7

Pour the prepared batter into the lined baking dish, place it in the preheated oven and bake for 10-15 minutes.

Step 8

Heat the remaining brown sugar in a non-stick pan and heat till it caramelises. Add fresh cream and mix well. Add butter and mix till it melts.

Step 9

Bring the baking dish out of the oven and pour this sauce over the pudding. Place the dish back in the hot oven and bake again for 45-50 minutes.

Step 10

Cut into squares, place each square in a serving plate, place a scoop of vanilla ice-cream over it, garnish with a mint sprig and serve
