Hindi: palak
Treasure house of vitamins and minerals, spinach must be included in the week's menu. The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Ingredients for Spinach Potato soup Recipe

  • Spinach blanched 100 grams

  • Potatoes 1/2 cup

  • Butter 1 tablespoon

  • Ginger-garlic paste 1/2 teaspoon

  • Coconut milk 2 cups

  • Vegetable stock 1 cup

  • Potato, boiled and mashed 1 large

  • Black pepper powder 3/4 teaspoon

  • Salt to taste

  • Lemon juice 1 tablespoon

  • Fresh cream 4 teaspoons


Step 1

Blend together spinach leaves and green peas.

Step 2

Heat butter in a non stick pan and add ginger garlic paste and saute for a minute. Add coconut milk, vegetable stock and let it boil for five minutes.

Step 3

Add potatoes, spinach paste, black pepper powder, salt, lemon juice and fresh cream and let it simmer on a low flame for two minutes.

Step 4

Remove from flame and serve hot.
