Ingredients
- 1 cup semolina
- Salt to taste
- Dried red chilli flakes for sprinkling
- Dried oregano for sprinkling
- Oil for drizzling + deep frying
Method
- Heat 1½ cups water in a non-stick pan; let it come to a boil. Add semolina, salt and mix well. Cover and cook for 2 minutes.
- Sauté again and cook till the mixture leaves the sides of the pan and thickens slightly. Take it off the heat, set aside in a bowl and allow to cool.
- Mix the cooled semolina mixture well and shape it into a ball. Place the prepared semolina mix on a sheet of plastic, drizzle a little oil and place another layer of plastic sheet on top and flatten.
- Roll the prepared mixture into thick sheet, drizzle a little oil on the knife and grease it. Cut the edges of the semolina sheet and discard them, cut the remaining into fingers. Set them aside.
- Heat sufficient oil in a non-stick pan, deep fry the prepared fingers till golden brown and crispy. Drain on an absorbent paper.
- Transfer into a bowl, sprinkle dried red chilli flakes, dried oregano and a pinch of salt and toss well. Serve hot.
