Ingredients
- 1 cup sugar
- 750 grams refined flour (maida)
- 3/4 cup oil + to deep fry
- Salt to taste
Method
- Heat a non-stick pan, add sugar, 1 cup water, oil and salt, mix and boil till the sugar melts.
- Remove from the heat and add flour, mix and knead to a semi-stiff dough.
- Divide the dough into equal balls and roll out each ball into a large disc. Cut out diamonds.
- Heat sufficient oil in a kadai. Gently slide the dough diamonds and deep-fry on medium heat till golden brown. Drain on absorbent paper and cool.
- Put them on a serving plate and serve or store in airtight containers.
