Ingredients list for Sandesh-SK Khazana
- (2 litres) cups Cow's milk
- 1/2 cup Lemon juice
- 1 cup Castor sugar
- 1/2 teaspoon Green cardamom powder
- a few Pistachios blanched and finely chopped
Method
- Bring the milk to a boil in a deep, thick-bottomed non-stick pan. Add lemon juice and stir till the milk curdles and becomes chenna.
- Place a strainer lined with muslin cloth over a bowl and pour the chenna into it and drain excess liquid.
- Put some ice cubes in a large bowl, add sufficient water and dip the muslin cloth with the chenna in it to cool it down completely.
- Further squeeze the muslin cloth potli till all the water is drained out.
- Put the chenna in a parat, add castor sugar and cardamom powder and knead with the heel of your hand.
- Transfer the mixture into a non-stick pan and cook on medium heat for 6-8 minutes. Remove from heat and transfer the mixture into a bowl and let it cool.
- Divide the mixture into equal portions, shape into balls and flatten slightly.
- Top with some pistachios and serve.
