How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Sabut Masoor Ki Khichri Recipe

  • Rice 1 1/2 cups

  • Lentils 1/2 cup

  • Onion 1 medium

  • Ginger 1 inch pieces

  • Garlic 2-3 cloves

  • Green chillies 2

  • Ghee 4 tablespoons

  • Cumin seeds 1 teaspoon

  • Black peppercorns 5-6

  • Cloves 2

  • Cinnamon 1 inch sticks

  • Turmeric powder 1/4 teaspoon

  • Salt to taste


Step 1

Clean rice and lentils. Mix the two, wash and soak in four cups of water for ten to fifteen minutes.

Step 2

Drain and keep aside. Peel, wash and slice onion. Peel, wash and finely chop ginger and garlic. Remove stems, wash and finely chop green chillies.

Step 3

Heat two tablespoons of ghee in a thick-bottomed vessel, add cumin seeds, peppercorns, cloves and cinnamon and allow to change colour.

Step 4

Add onion and sauté for two minutes. Add ginger, garlic and green chillies and sauté further for half a minute.

Step 5

Add soaked rice and lentils along with turmeric powder, salt and four cups of water.

Step 6

Cover and cook on medium heat till done. Drizzle remaining ghee over cooked khichri and serve hot.
